At Tres Monos in Buenos Aires, energy is not an accessory to the experience; it is the structure that holds everything together. What appears spontaneous is, in reality, tightly controlled, with every drink, every gesture, and every interaction calibrated beneath the surface.

The bar was founded by Sebastián Atienza, Santiago Lambardi, and Tato Giovannoni, each bringing a distinct perspective to the project. Giovannoni, widely recognised for his work at Florería Atlántico, contributes a broader vision of Argentine cocktail culture, while Atienza and Lambardi shape the day-to-day identity of Tres Monos through execution, pace, and a highly tuned sense of service.

Energy as a Controlled Environment

Nothing about Tres Monos is designed to feel restrained. Bartenders move quickly, music fills the room, and the atmosphere leans toward intensity. Yet beneath that surface lies a system that ensures precision is never compromised by speed.

The bar represents a shift toward a style of bartending that embraces personality, pace, and flavour-forward execution, without abandoning technical discipline. It has influenced a generation of bars that seek to combine energy with precision, rather than treating them as opposing forces.

The Room as a Living System

The space itself contributes to the experience. Compact, active, and constantly in motion, it encourages interaction between guests and bartenders. There is little distance, both physically and socially, creating an environment where the bar feels immediate and accessible.
