Morning light reaches the front room first. At Tayēr + Elementary, that matters. Doors open early, coffee is poured, and the pace feels closer to a neighbourhood café than a late-night cocktail destination. By the time evening settles over London, the same address reveals a second rhythm behind it. The space shifts, the drinks change, and what begins as accessibility evolves into one of the most system-driven cocktail programs in modern bartending.

The project is led by Monica Berg and Alex Kratena, whose work together has long influenced how contemporary bars think about technique and service. Their collaboration here is not about merging ideas into a single format, but about building two parallel approaches under one roof. The result is a bar that moves between everyday drinking and highly controlled precision, without forcing a choice between the two.

Two Rooms, Two Speeds, One Philosophy

The front space, Elementary, operates with clarity and ease. Drinks are approachable, formats are familiar, and the focus remains on flavour, balance, and immediacy. Highballs, seasonal serves, and well-structured classics define the offering, supported by a service style that encourages repeat visits rather than occasion-based drinking.

Step further in and Tayēr presents a different environment entirely. The room is darker, more focused, and built around a central island where cocktails are prepared with measured intent. Here, the menu is reduced, each drink refined to its most essential form, and every element of production is controlled with precision.

Despite the contrast, the two spaces are not opposites. They function as extensions of the same idea, demonstrating how a bar can operate across different levels of engagement while maintaining a consistent standard of execution.

The Signature Serve and the Language of Precision

The One Sip Martini

Across both rooms, one drink has come to define the bar’s identity: the One Sip Martini.

Designed to be consumed in a single, concentrated moment, it distils the structure of the Martini into its most focused expression. Built on gin and vermouth, the serve is delivered at exact temperature and dilution, ensuring that aroma, texture, and balance align perfectly in a single sip.

In practical terms, the One Sip Martini functions as the bar’s signature cocktail. It reflects a philosophy that values clarity over scale, showing how a familiar structure can be reinterpreted through control rather than complexity.

The Bergamot Margarita

Alongside it, drinks such as the Bergamot Margarita extend this thinking. Drawing from the framework of the Margarita, the serve introduces citrus variation while maintaining structural balance. Each cocktail on the menu operates within defined parameters, reinforcing the idea that precision does not limit creativity, but sharpens it.

Systems Behind the Bar

What distinguishes Tayēr is not only what is served, but how it is produced. Draft systems, pre-batching, and controlled storage allow the bar to manage variables that would otherwise fluctuate during service.

Cocktails are often prepared in advance, with dilution and temperature calibrated before they reach the guest. This approach ensures that each serve arrives in a consistent state, reducing reliance on real-time adjustment. The workflow is designed to support repeatability, efficiency, and exact execution.

Even within Elementary, where the atmosphere feels more relaxed, the same systems operate beneath the surface. The difference lies in how they are expressed, not in whether they exist.

Recognition and Lasting Influence

Since opening, Tayēr + Elementary has consistently appeared in global rankings, including The World’s 50 Best Bars. Its influence extends beyond awards, shaping how bars approach menu design, production, and service.

The project has contributed to a broader shift toward system-led bartending, where consistency is built into the process rather than left to individual interpretation. It has also demonstrated that high-level technique can coexist with accessibility, expanding the audience for precision-driven cocktails.

The Space as a Working Environment

The physical design reflects the bar’s dual nature. Elementary feels open and fluid, encouraging movement and interaction. Tayēr, by contrast, is structured and contained, with a layout that supports focus and control.

Service adapts accordingly. In the front room, it is informal and responsive. In the back, it becomes more deliberate, aligning with the pace of the drinks being served. In both cases, the approach remains grounded in clarity, awareness, and a strong sense of rhythm.

Where Accessibility and Precision Converge

Tayēr + Elementary offers a perspective on modern bartending that avoids extremes. It does not treat accessibility as a compromise, nor precision as an abstraction. Instead, it shows how the two can operate together, each reinforcing the other. The One Sip Martini captures this balance in a single gesture, reducing a classic to its essence while maintaining its identity. It is a reminder that innovation can come from refinement and control, rather than expansion.

In a global landscape often defined by contrast, Tayēr + Elementary presents a more integrated model. One where everyday drinking and high-level technique are not separate paths, but part of the same system, working in parallel.
