Cartagena 2025: Where the World’s Cocktail Culture Reveals the Future of Spirits

From 23 to 27 November 2025, the city of Cartagena, Colombia, will become the centre of global cocktail culture. The Caribbean port will host the 72nd World Cocktail Championship, organised by the International Bartenders Association. For spirit lovers, this gathering is far more than a professional contest. The event creates a moment where the evolution of taste, technique, cultural identity and innovation becomes visible across a few transformative days.

The Legacy Behind the World Cocktail Championship

The International Bartenders Association has shaped the global bartending landscape for more than seven decades. Founded on 24 February 1951 at the Grand Hotel in Torquay in the United Kingdom, the organisation began with seven founding guilds representing Denmark, France, Italy, the Netherlands, Sweden, Switzerland and the United Kingdom.

Today, the IBA includes 69 national bartender federations, each with structured training programmes, national competitions and professional standards. The champions from these national stages earn the right to represent their countries on the world stage, creating a cultural and technical exchange that defines the World Cocktail Championship.

A Global Meeting of Cultures and Techniques

The 2025 edition will assemble competitors from more than 60 countries, along with brand leaders, judges, media and industry professionals. Every competitor represents the flavour identity and cultural history of their nation. Each cocktail becomes a narrative shaped by traditions, ingredients and national spirit profiles.

Japan brings precision influenced creations inspired by tea practices and delicate whisky notes.
Italy showcases amari, vermouth traditions and regional liqueurs.
Latin America highlights rum styles, aguardientes and tropical produce.
Northern Europe contributes aquavit expressions and botanical distillations.
Southeast Asia introduces pandan, coconut, spices and aromatic infusions rooted in its culinary heritage.

Through these expressions, the event becomes a living map of global drinking culture and craftsmanship.

The Championship as an Engine for Innovation

The influence of this gathering extends beyond the competition stage. Techniques that first emerge here including clarified cocktails, hybrid fermentations, modern infusion practices and low ABV constructions often shape global bartending trends.

Spirits presented at the event frequently gain international visibility, while rising distilleries use the gathering to introduce their identity to the world. Watching the competition provides insight into which traditions are resurging, which countries are advancing and which ideas will guide the future of global mixology.

Cartagena as a Cultural Inspiration

Cartagena contributes a unique energy to the event. The city’s layered identity formed by Afro Caribbean, Indigenous, Spanish and maritime influences shapes the creativity of many visiting bartenders. Local ingredients such as cacao, cane juice, tropical fruits, citrus and Colombian coffee become sources of inspiration for competitors who weave these flavours into their creations.

The city becomes both a welcoming host and an artistic muse, transforming the event into a dialogue between traditions that arrive and traditions that belong to Cartagena.

The Importance of Codified Classics

The IBA’s authority gives additional weight to the event. Its list of more than 102 Official IBA Cocktails forms a foundation for bartending education and international competition. During the gathering, these established classics meet contemporary reinterpretations and new creations, creating a rare moment where heritage, technique and innovation appear together in real time.

Why This Event Matters for Enthusiasts

For spirit lovers, even those who have never mixed a drink behind a bar, the gathering offers an unparalleled look into the world of spirits. The event concentrates everything that defines modern drinking culture including technique, terroir, creativity, sustainability and cultural storytelling. Across five days in Cartagena, the global identity of cocktails is revealed with clarity, offering a unique view of how the world of spirits continues to evolve.
