There’s a certain kind of bar where nothing feels dramatic. The lighting is steady, the service is measured, and the drinks arrive exactly as expected. Linards Grundmanis learned the craft in Riga; many hotel bars operate this way, not as stages for creativity, but as systems built on reliability.

Before competitions, before recognition, his work was defined by repetition that rarely gets noticed. The same drink, made dozens of times in a shift, has to hold its balance without adjustment. There is no room to experiment mid-service, only to execute. Over time, that environment changes how you think about cocktails. You stop chasing precision and start working in a way that avoids losing it.

When Grundmanis stepped onto the international stage in 2018, he carried that mindset with him. At the IBA World Cocktail Championship 2018, organised by the International Bartenders Association, the format demanded more than a single well-made drink. It required consistency across repetition, where execution had to remain stable under scrutiny.

Representing Latvia, he won the Classic Cocktail category, earning the title IBA World Cocktail Champion 2018. The drink itself didn’t try to stand out through complexity. It held its structure. Each element aligned cleanly, with no part pulling away from the whole. In a competition where variation becomes visible quickly, that kind of control carries weight.

A Style That Settles Rather Than Surprises

Grundmanis’ approach doesn’t lean toward contrast or dramatic flavour shifts. His cocktails tend to settle into place rather than unfold in stages. The balance is direct, almost quiet, where sweetness, acidity, and aromatic elements meet without competing.

It’s a style shaped less by intention to impress and more by an awareness of how easily a drink can lose its structure. By reducing unnecessary elements, he builds compositions that remain stable, even when repeated multiple times.

From Routine to System

Latvia’s bartending culture has long been connected to structured training through the Latvian Bartenders Federation, where competition is not separate from the profession, but part of it.

Grundmanis’ progression reflects that system. What begins as routine in a service environment gradually becomes a method, one that translates directly into competition, where repetition is no longer hidden behind the bar, but evaluated openly.

After his world title, his work continued to move through that same framework, extending into training and mentorship, reinforcing a model where discipline is passed forward rather than reinvented.

Linards Grundmanis career does not rely on dramatic shifts or reinvention. It moves through refinement. In a craft that often highlights creativity, his work shows what happens when consistency itself becomes the defining quality.
