In Buenos Aires, bartending is rarely quiet. Service moves fast, conversations overlap, and the energy of the room shapes every interaction. For Román Granitto, this environment was not a challenge to manage but a system to understand. Control, in this context, is learned through movement rather than imposed on it.

His early development came through this pace, where drinks are made quickly but cannot lose balance. Consistency has to survive pressure, and precision must hold even when the rhythm shifts. Over time, this created a method grounded in reliability rather than improvisation.

During the early 2010s, Buenos Aires began to establish itself as a serious cocktail destination. Venues such as Florería Atlántico, opened in 2013, introduced a layered approach that combined history, ingredients, and storytelling, while Presidente Bar, launched in 2017, reflected a move toward refined service and international standards. These developments shaped the city’s identity, though Granitto’s path remained focused on execution rather than concept.

From Local System to International Stage

Argentina’s bartending structure is closely connected to the Asociación Argentina de Barmen, where competition plays a central role in professional development. Within this framework, bartenders transition from service environments into controlled formats where technique is evaluated under strict conditions.

IBA World Cocktail Champion, 2021

In 2021, Granitto represented Argentina at the IBA World Cocktail Championship 2021, organised by the International Bartenders Association. The event, held in Rome and bringing together participants from more than sixty countries, remains one of the most established platforms in professional bartending.

Competing in the Classic Cocktail category, he secured first place, earning the title IBA World Cocktail Champion 2021. His performance was defined by composure. The drink was not built to stand out through contrast, but to hold together through balance, where sweetness, acidity, and structure aligned without disruption.

A Method Defined by Consistency

Granitto’s approach centres on control through repetition. His cocktails are built by focusing on essential elements, ensuring that each component contributes directly to the final structure. This results in drinks that remain stable across preparation, rather than dependent on variation.

In this process, details such as dilution and temperature are treated as fundamental. They are not secondary adjustments, but core elements that determine how a cocktail evolves beyond its initial build.

Between Movement and Structure

Buenos Aires continues to operate between two distinct approaches. One is expressive, driven by creativity and narrative. The other is structured, defined by discipline and measurable execution. Granitto’s work sits between these, but remains anchored in control. His progression from high-energy service to international competition reflects how structure can emerge from movement, rather than replace it.

Following his world championship win, his role expanded into mentorship and professional development within Argentina’s bartending community. Through this, his experience contributes to a system where consistency is not only expected, but reinforced.

Refinement Through Repetition

Román Granitto’s career is not built on reinvention. It is shaped through refinement, where repetition turns into instinct, and precision remains intact regardless of pace.
