A pastrami sandwich shop is not where most people expect to find one of the world’s most influential cocktail bars. Yet behind the unassuming façade of Pastrami Bar, a discreet doorway opens into Paradiso, a space that has redefined how cocktails can be experienced. In Barcelona, where innovation in hospitality has become part of the city’s identity, Paradiso stands apart by transforming drinks into narratives shaped through design, technique, and theatrical execution.

Founded by Giacomo Giannotti, Paradiso is not simply a bar hidden behind a secret entrance. It is a carefully constructed environment where every cocktail is conceived as a complete experience, extending beyond flavour into form, aroma, and interaction. Giannotti’s background, rooted in both classic bartending and modern experimental techniques, informs a concept that blends precision with imagination, allowing each drink to unfold with intention.

Entering Through Illusion, Staying for Structure

The concealed entrance is more than a novelty. It establishes the first layer of storytelling, setting expectations before a drink is even ordered. Once inside, the space shifts from playful secrecy to controlled design, where curved wooden structures and warm lighting create an immersive environment without becoming overwhelming.

This transition reflects the bar’s core idea. Paradiso uses illusion as an entry point, but what sustains it is technical structure and disciplined execution. The theatrics are never detached from the liquid itself. Instead, they are built around it, ensuring that the experience remains grounded in the fundamentals of balance and flavour.

The Great Gatsby

Paradiso’s identity is expressed through a series of cocktails that function as individual stories. Rather than relying on a single defining serve, the bar has developed a collection of signature drinks, each with its own visual and conceptual framework.

Among the most recognised is the Great Gatsby, a cocktail served in a presentation designed to evoke a sense of occasion. Its structure is carefully balanced, ensuring that the visual impact does not overshadow the liquid. The drink demonstrates how theatrical elements can enhance, rather than distract from, flavour.

The Supercool Martini

Another defining serve is the Supercool Martini, where temperature and texture are manipulated to create a Martini that feels distinctly modern while remaining structurally precise. The use of controlled chilling techniques allows the drink to maintain clarity, stability, and a refined aromatic profile.

A Cocktail as a Complete Composition

Across the menu, these cocktails share a common approach. Each one is constructed as a complete piece, where glassware, aroma, and visual design are integrated into the composition, not added as decoration. In this sense, Paradiso’s signature lies not in a single drink, but in its ability to turn cocktails into cohesive narrative forms.

Even the most elaborate serves are built on a framework that prioritises flavour first, allowing the guest to engage with the drink on multiple levels without losing its core identity.

This balance between technique and creativity is central to Paradiso’s success. It allows the bar to explore new forms of expression while maintaining a strong connection to the principles that define classic cocktail making.

Paradiso’s impact has been recognised at the highest level. In 2022, it was named the world’s best bar by The World’s 50 Best Bars, marking a significant moment not only for the bar itself, but for Barcelona’s position within global cocktail culture.

The recognition highlighted a broader shift toward bars that combine technical excellence with experiential design. Paradiso became a reference point for venues seeking to expand the boundaries of what a cocktail can represent, influencing a new generation of bars across Europe and beyond.

The Space as an Extension of the Drink

Inside Paradiso, the environment functions as an extension of the cocktails. The layout encourages movement, allowing guests to observe the preparation process and engage with the bar from different perspectives.

Service is interactive without being intrusive. Bartenders guide the experience when necessary, explaining the structure of a drink or the intention behind its presentation. This creates a dynamic where the guest becomes part of the narrative, rather than simply observing it.

The result is a space where design, service, and liquid operate as a single system, each element reinforcing the others.

Paradiso demonstrates that storytelling in cocktails does not require abstraction. Instead, it shows how narrative can be built through precision, design, and a clear understanding of structure.

By combining theatrical presentation with disciplined technique, the bar has created a model where drinks are experienced as complete compositions. Each cocktail carries a sense of purpose, guiding the guest through a sequence that feels both engaging and coherent.
