Tate chose Golden Promise malted barley, a heritage grain celebrated in Scotland, and used it as the foundation for a distinctly American interpretation of single malt.

He believed that whisky should speak of its origin. The heat, the grain, and the local air would become ingredients as essential as water and oak. From this belief, Balcones Texas Single Malt was born – an expression of regional identity that set the stage for a new category in American distilling.

The Process Behind the Spirit

The new facility houses a custom still system made by Forsyths of Scotland, uniting two worlds of whisky making under one roof.

Under the leadership of Jared Himstedt, the master distiller, Balcones continues to balance tradition with experimentation. Himstedt describes his process as “listening to the whisky” rather than controlling it. His team works with regional barley strains, explores various cask finishes, and remains committed to local sourcing whenever possible. Each bottle of Balcones Texas Single Malt captures not just flavor but the journey of craft itself.
