At Ozone Bar in Hong Kong, located in The Ritz-Carlton, and within the broader rise of technically focused bars such as Quinary in Hong Kong, bartending operated as a structured process. Precision was expected, not showcased.

From this environment, Ma developed a style defined by restraint. His cocktails focus on proportion and clarity, where each element is placed with intent and nothing is included without purpose.

From Service to the World Stage

Hong Kong’s bartending culture has long been connected to competition through the Hong Kong Bartenders Association, which provides a pathway from daily service into international performance. Within this system, technical consistency becomes measurable under global standards.

IBA World Cocktail Champion, 2012

In 2012, Ma represented Hong Kong at the IBA World Cocktail Championship 2012, organised by the International Bartenders Association. Held in Beijing with competitors from more than sixty countries, the event remains one of the most established platforms in professional bartending.

Competing in the Bartender’s Choice category, he secured first place, earning the title IBA World Cocktail Champion 2012. His winning cocktail reflected the discipline behind it, structured, balanced, and executed with consistency, meeting the competition’s core standards without relying on complexity.

World Bartender of the Year, 2024

More than a decade later, Ma’s career reached a broader level of recognition. At the IBA World Cocktail Championship 2024, held in Madeira, Portugal, he was named World Bartender of the Year by the International Bartenders Association.

Beyond competition, his role has expanded into mentorship and professional development, contributing to the continued growth of Hong Kong’s bartending standards.
