History
The creation of Mistral Noble Pisco – Anejado en Roble is rooted in the rich tradition of pisco making that dates back to the colonial era of Chile. Pisco itself is a grape spirit that emerged in the 16th century, with the Elqui Valley being one of the primary regions for its production since the days of Spanish colonization. The Mistral brand was founded in 1999 by the Mistral family, who sought to elevate this traditional spirit by using grapes from the most suitable vineyards in the valley. The choice to age the pisco in oak barrels was inspired by a desire to explore the complexity of flavors that can develop through interaction with wood. Today, Mistral Noble Pisco shows the commitment to preserving heritage while embracing modern techniques to produce a distinguished spirit.
Fabrication Process
The production of Mistral Noble Pisco – Anejado en Roble begins with the careful selection of Muscat grapes, specifically the Muscatel variety, sourced exclusively from their vineyards in the Elqui Valley. Once harvested, the grapes are pressed to extract their juice, which is fermented in stainless steel vats to preserve the grape’s inherent qualities. After fermentation, the liquid is distilled twice in copper pot stills, a method that retains the purity and expression of the grape varietals. Following distillation, the spirit is transferred to oak barrels for aging, where it rests for a minimum of two years, allowing it to absorb characteristics from the wood and develop a complex profile. The final product is then bottled at 40% ABV without any additional additives, ensuring purity.
