Tasting Notes
Hayman’s Old Tom Gin presents a complex nose with prominent notes of juniper, pine, and zesty lemon oil, balanced by subtle hints of baking spice and a distinct licorice root aroma. On the palate, it offers a rich and rounded experience, where the initial sweetness gracefully mingles with herbal qualities and a peppery undertone, providing depth. As it lingers, one can discern a warm and velvety mouthfeel that invites exploration, allowing the flavors of citrus and spices to develop fully before culminating in a pleasantly soft finish. The gin’s noteworthy sweetness is juxtaposed by well-integrated botanicals, ensuring a multifaceted tasting experience that captures the essence of its historical roots.
History
The history of Hayman’s Old Tom Gin is a narrative steeped in tradition and revival. Historically, Old Tom gin was a popular choice among gin drinkers during the Victorian era, particularly in the mid-1800s. The term ‘Old Tom’ itself is derived from the wooden cat-shaped sign commonly used outside gin palaces in London, signaling a place where this style of gin could be enjoyed. Unfortunately, by the early 20th century, Old Tom gin had almost vanished from the market as taste preferences shifted sharply towards the drier style of London gin. Recognizing the need to preserve this unique historical spirit, the Hayman family decided to revive the Old Tom recipe, bringing this forgotten style back to the forefront of modern gin culture. Their dedication has since garnered a reputation for producing one of the finest examples of Old Tom gin available today.
Fabrication Process
The fabrication process of Hayman’s Old Tom Gin involves meticulous attention to detail and a commitment to tradition. The distillation begins with a high-quality neutral grain spirit, which is then infused with a blend of ten botanicals. These include classic choices such as juniper berries, coriander seeds, angelica root, and citrus peels. The botanicals are carefully measured and macerated in the neutral spirit, allowing their flavors to extract fully. After a resting period, the mixture is distilled in traditional pot stills, ensuring a smooth and rich spirit. The distillation process is monitored closely to achieve the desired flavor profile, after which the gin is sweetened with a small amount of added sugar, characteristic of Old Tom style, resulting in its distinctive sweet yet balanced character.
