The creation of Colombo No. 7 London Dry Gin can be traced back to the heritage of Amal de Silva Wijeyeratne’s grandfather, a figure who played a crucial role in the family’s rich history of distillation. The recipe for this gin was established in the 1940s in Sri Lanka, a time when the country was then known as Ceylon. At that time, British Excise Officers were skeptical that a high-quality London gin could emerge from outside the United Kingdom, which fueled a culinary challenge for the local distillers.
As a nod to the rich tradition of gin-making inherent in England, Colombo No. 7 was designed to meet and exceed those expectations, combining time-honored practices with unique local influences. The gin was subsequently distilled in England, showcasing a harmony of cultures and techniques in its production, a perfect example of British and Sri Lankan craftsmanship intertwined through history. The name ‘Colombo’, reflecting the capital of Sri Lanka, serves as a reminder of the extraordinary blend of influences that form its character, marrying local flavors with classic gin craftsmanship.
Fabrication Process
The production of Colombo No. 7 London Dry Gin begins with a blend of select botanicals that include seven key ingredients: juniper berries, coriander seeds, angelica, liquorice root, cinnamon bark, curry leaves, and ginger. Each of these components is chosen not only for their flavor profile but also for the cultural significance they hold, particularly in Sri Lankan cuisine.
Once the botanicals have been selected, they undergo a meticulous process of maceration.
