Fabrication Process

The fabrication process of Appleton Estate 21 YO Jamaica Rum begins with the harvesting of sugarcane, which is cultivated in the nutrient-rich soils of Jamaica. The cane is pressed to extract the juice, which is then fermented using a mix of natural yeasts, including those present in the environment and those cultivated specifically for the distillation process. After fermentation, the resulting wash is distilled in both pot and column stills, a traditional practice that gives complexity to the spirit. Once distilled, the rum is then aged in charred bourbon oak casks, a process that allows the spirit to interact with the wood, extracting flavors, aromas, and color over its 21-year aging period.
