History
The origin of Hibiki can be traced back to 1989, established by the House of Suntory as a tribute to the Japanese whisky-making tradition. Fabrication Process
The production of Hibiki Japanese Harmony involves an intricate process that begins with selecting the highest quality grains – primarily malted barley and corn. These grains undergo mashing, where they are combined with water heated to create a mash. Yeast is then added, and fermentation occurs in stainless steel tanks. The resulting wash is distilled twice in pot stills. After distillation, the spirit is aged in a combination of casks, predominantly American oak and Sherry casks, to impart unique flavors. The whiskies from various distilleries are then blended with great care, allowing the different character profiles to meld together, culminating in the final creation that is Hibiki Japanese Harmony.
