The roots of Pisco Portón trace back to the 16th century when Spanish settlers began producing grape brandy in the valleys of Peru. Master Distiller Johnny Schuler, a key figure in promoting pisco, has dedicated his efforts to reviving and refining the production methods of this unique spirit. Since its inception, Pisco Portón has strived to highlight the qualities of pisco made from the freshest estate-grown grapes, aligning traditional techniques with cutting-edge distilling technologies, ensuring consistent quality and character.

Fabrication Process

The fabrication of Pisco Portón begins with the careful selection of premium grapes from specially chosen vineyards in Ica. The grapes, primarily from the Quebranta, Torontel, Muscatel, and other approved varietals, are harvested at peak ripeness. The production process employs the use of traditional basket presses, where the grapes are gently crushed to extract their juice without crushing the seeds, which minimizes bitterness. This juice is then fermented with natural yeasts to initiate the conversion of sugars into alcohol. The spirit is distilled in copper pot stills, in small batches to ensure control over the quality and character of the final product. The distillation process is executed at a specific temperature to preserve as much of the aromatic character of the grapes as possible. Subsequently, Pisco Portón is rested in stainless steel tanks to mellow and integrate its flavors before bottling. The entire production cycle underscores a commitment to authenticity and quality, honoring the original Peruvian traditions while embracing modern refinement.
